For the past two years, the Organic Sandwich Company has been taking what most know about the fast food experience and putting it into the world of local and sustainable farm foods. Quick, organic, healthy lunches served on a moment’s notice has become the rule to live by for founder Marcy Miller.
The Restaurant
Marcy’s obsession with the standard sandwich developed in childhood when her mom would make countless lunches that mostly came from the family garden. Inspired by simple ingredients that stayed natural, Marcy began building the Organic Sandwich Company as a way to quickly feed people good food. Spending a solid year as a regular at the Boulder Farmers Market, she graduated to a full-fledged store without forgetting her local community. Rallying with the best that local organic farmers have to offer, The Organic Sandwich Company is a bright and comfortable commissary to sit for a quick lunch or grab and go.
The Food
After spending time working through the menu at the Boulder Farmer’s Market, all of the ingredients in each sandwich come from loving sources featuring nitrate-free pork and grass-fed beef. Served fast-food style, Organic Sandwich Company challenges the idea that farm-to-table is an experience meant for long meals. Their roasts are taken care of in-house, along with their aiolis, giardinieras, and sauces, cranberry or otherwise. Each sandwich and salad features some of the best picks from the organic farmers of Colorado with roasted beets and goat cheese like the beet salad, or the Spicy Veggie sandwich with its spicy giardiniera and pea shoots on a pretzel loaf.
