Inside the Kitchen: Nuba
posted on
Situated in the heart of Vancouver, Nuba was founded with the desire to spread the joy of family recipes and has been serving healthy and fresh Lebanese food since 2003.
The Restaurant
Offering an array of pitas, wraps and plates, Nuba is the perfect place to get a taste of the Middle East without leaving Vancouver. The meals at Nuba are only made of the freshest ingredients. They source organic and local when available—and handpick everything daily. There’s something for every dietary restriction as a large portion of their menu items are vegan and all meats are halal, non-medicated and free of hormones. Nuba is a family affair since many of their recipes and ingredients have been passed down through several generations, and sincerely nurtured. You don’t mess with perfection so the cornerstones of the menu have remained unchanged for over a century, but the recipes have evolved through time and travel into a beautiful balance of traditional and contemporary Lebanese cuisine.
The Food
Nuba started off as a 15 seat restaurant and has evolved and grown to four locations and a catering department in Vancouver. Nuba was founded by Victor Bouzide in 2003 with the intention of spreading the goodness of his grandmother’s cooking. Ernesto Gomez started out as a customer in 2006 and immediately fell in love with Nuba’s menu and feel. Together they formed the perfect partnership pairing their love of food and dedication to excellence. With locations in Yaletown, Gastown, Kitsilano and Mount Pleasant, Nuba is never too far away.
